Baked Chicken Parmesan

Last night I made chicken parmesan on top of spaghetti, and I must say this is a meal worth making many times! I have made this multiple times since joining weight watchers. Thats right its a weight watchers meal! So I thought I would share this easy meal with others so they can enjoy it as much as we do! Unfortunately I forgot to take a picture of the finished product, so just a recipe :)

Ingredients:
4 (8 oz) Boneless, skinless, chicken breasts, sliced in half
3/4 c. seasoned breadcrumbs (Italian bread crumbs)
1/4 c. grated parmesan cheese ( I just use the bottle parmesan cheese, I dont actually grate any)
2 tbsp butter, melted
3/4 c. reduced fat mozzarella cheese
1 c. marinara (I use a whole jar cause I top the chicken on spaghetti noodles)
1/2 lb. spaghetti noodles
cooking spray

Preheat oven to 450 degrees. Clean up chicken. Get a pot of water boiling for the pasta. Spray a large baking sheet lightly with spray.

Combine breadcrumbs and parmesan cheese in a bowl. Melt butter in another bowl. Lightly dip the chicken breast into the butter so that both sides have butter on them, then dip the chicken into the breadcrumbs so its covered on both sides. Place on baking sheet and repeat with the remaining chicken.

Lightly spray a little more cooking spray on top of chicken and bake for 20 min. Cook pasta according to box. Warm up marinara in a small pot. Turn chicken over after 20 min. is up and bake for another 5 min. Remove from oven, spoon sauce on top of chicken and top with shredded mozzarella. Bake 5 more min. or until cheese is melted. 

Serve chicken on top of spaghetti and marinara sauce and ready for eating! I will make a french bread loaf to go with it and its SO yummy! Hope you enjoy as much as we do!

Butterfinger Blondies O My!

Well I recently got thinking on how I want to do food as well on my blog, and lately I have been having a real sweet tooth! So why not do a dessert! As most of you know I have been on weight watchers since the end of Jan. of 2012, and it has been an absolute success for me, and Ross. I actually counted my point, Ross didn't, but with what I was making and had in the house he has lost 25 -30 lbs! I made it to my goal weight in the beginning of June, YAY! 24 lbs gone and it feels amazing to say I did it! Ross and I have done a great job maintaing since then. But like all people, I get a craving for something ridiculously fattening and so good once in a while! So with the help of Pinterest I can easliy find something to make. So like I said I have been having a real sweet tooth lately and come across Butterfinger Blondies, and thought OMG! I must make!

Blondie Ingredients:
1 c. butter
1 c. light brown sugar
2 tsp vanilla
2 eggs
2 1/2 c. all purpose flour
1 tsp baking soda
1 tsp salt
2 cups coarsely chopped Butterfinger Bars (approx 16 "Fun Size" bars)

Butterfinger Buttercream Ingredients:
1/2 c. room temp butter (1 stick)
1/2 c. vegetable shortening
2 1/2 -3 c. (I used 3 c.) powdered sugar
1/2 c. chopped Butterfinger Bars (approx 4 "Fun Size" bars)

Instructions for Blondie:
Preheat oven to 350 degrees
Cream together butter and sugars, add vanilla, and eggs until well mixed.
On low add your dry ingredients (flour, salt, and baking soda) until well combined.
Stir in chopped Butterfinger, which will look like this.....


Then spread in a sprayed 9x13 baking dish



 And the recipe said to bake for 25 min. but I baked it for 35-40 min. cause there was no way it was ready in 25 min. Super gooey still. So after 25 min. I would cook it by 5 min. intervals, until the center is JUST set. (thats what the recipe said lol). Remove from oven and cool completely.

As you see in the picture there is a slight whole in the blondie, thats because I had to make sure it was done lol!

Instructions for Butterfinger Buttercream:
While the Blondie was baking in the oven I went on and made the Butterfinger Buttercream. 
Blend the butter and shortening together until smooth.
Add in the powdered sugar, on LOW speed (It can make a big mess). Mix until smooth.


Stir in your chopped Butterfinger (I sprinkled mine on top rather then stirring them in!) Spread on cooled blondes!

Now dont get me wrong this is good! But it wasnt SUPER REALLY good like I thought :) But I still thought it was good!
